Crème Brûlée

 

4 1/2 cups heavy cream

9 tablespoons sugar

9 egg yolks

3 teaspoons vanilla

3/4 cup light brown sugar

1. Preheat oven to 300.

2. In double boiler, heat cream over boiling water. Stir in sugar.

3. Beat egg yolks in a large bowl until very light. Gradually pour hot cream over them, blending well. Stir in vanilla.

4. Strain the mixture into a 2-quart shallow baking dish. Place dish in a pan with

1-1 1/2 inches very hot water in the bottom.

5. Bake for 1- 1 1/2 hours, or until a knife inserted in the center comes out clean. Be careful not to over bake.

6. While still warm, cover surface with brown sugar. Broil for about 2 minutes, being careful not to burn.

7. Chill well.
