Mango, Avocado & Black Bean Salad

It’s from Sara Moulton’s show Sara’s Secrets

 

I doubled the batch for the tasting.

 

A couple of things I did:

 

I placed the avocado and mango chunks in a lemon juice and water bath while I did everything else. I soaked them for about an hour before mixing, and it was maybe another half hour before we started eating.

 

I used half a large red onion, adjust according to how much onion you like!

 

I was out of the fresh parsley, so didn’t put any in.

 

And I used bottled lime juice (I was in a hurry!)

 Serve with:
Zinfndel
Cabernet Sauvignon
