Italian Style Chili
Ingredients:
12 oz hot Italian sausage
1 lb lean ground beef or stew beef
1/2 lb Hickory smoked bacon, cut
in 1-in slices
1 large
Spanish onion, cut in chunks
2 cloves
garlic, minced
1 green
bell pepper
1/2
jalapeno pepper, seed and minced
1 c
dark red wine
1/2
c Worcestershire sauce
1 1/2
tsp celery seeds
1 1/2
tsp hot dry mustard
2 tsp
chili powder
6 c
Italian tomatoes
15 oz
can pinto beans
15 oz
can kiney beans
15 oz
can garbanzo beans
Brown bacon in chili pot; drain and set aside. Pour bacon fat from pot and leave a film.
Brown sausage; set aside with bacon. Pour sausage fat from pot and leave a film. Fry ground/stew beef; drain and
set aside with other meats. Pour excess fat from pot.
Cook onion, pepper, garlic, jalapeno pepper over
low heat 2 to 3 minutes. Stir in wine and Worcestershire sauce; simmer uncovered about 10 min. Stir in mustard,
celery seeds, chili powder and salt and pepper to taste; simmer 10 min. Mash tomatoes; add (with liquid) and meats to
onion mixture. Heat to boiling, reduce heate and simmer covered for 30 minutes, stirring occassionally.
Stir
beans (with liquid) into chili; heat to boiling. Reduce heat, cover and simmer 1 hour, stirring occassionally.
This recipe is best when prepared a day in advance.
