Heat the peanut oil in a large saucepan Add onion, garlic, and mushrooms, saute until the onions are
soft and golden
Add crushed pepper, paprika, and ginger. Mix well and continue cookin gently for 2 minutes
Pour in stock, tomatoes, and cubed sweet potato and simmer until the potato is tender -- 15 minutes
Blend
in a food processor until smooth
Add mashed sweet potato and the peanut butter and blend again
Reheat
, if necessary, to serve
